12 Delicious Ideas for Pumpkin

With Thanksgiving around the corner, cans of pumpkin puree are all around us.   It’s a magical ingredient that adds a fall flair to just about anything.  This week we’re sharing 12 of our favorite recipe ideas from breakfast through dessert.

As you shop, be sure to buy 100% pure, not the pumpkin pix.  There is a difference!

1) Pumpkin Waffles
Yep.   Delicious and packed with vitamin C, to boot.  Add ½ cup puree for every egg in your recipe.  You can cut back on the oil and milk to make up the for extra moisture.

2) Pumpkin Oatmeal
Heat a 14 oz. can of pumpkin puree with 2 cups of water, then add 2 cups of raw oatmeal.  Cinnamon and nutmeg make it all the more delicious.

3) Pumpkin Hummus
Make a sweet version of everyone’s favorite snack with equal parts chickpeas and pumpkin and a splash of maple syrup.  A pinch of pumpkin pie spice and olive oil, and it’s a dip everyone will love.

4) Pumpkin Soup
Possibly the simplest from-scratch soup you can make.  Start with sautéed onion and garlic, then add pumpkin puree, vegetable stock and a splash of cream.  Puree it all together with your favorite herbs.  Add some croutons or crusty bread and dig in.

5) Pumpkin Pizza
Heavenly.  We add a splash of  balsamic vinegar, and a pinch of brown sugar and rosemary to pumpkin puree and use it as our sauce, then cook up with roasted fennel and blue cheese.  Topped with olives and dates, it’s a seasonal favorite.

6) Pumpkin Risotto
With gorgonzola and pecans, it’s a rich and creamy meal that’s packed with veggies.  We use pumpkin 3 ways – the puree with a little white wine and basil, roasted pumpkin (or butternut squash) cubes and top with spiced pumpkin seeds.  Yum!

7) Pumpkin Enchiladas
We make a pumpkin enchilada sauce by adding a little vegetable stock, cumin and splash of enchilada sauce to a can of pumpkin puree, then cook up with sweet potato and black bean enchiladas.  It’s creamy without any cream, making it a no-guilt dinner the whole family will love.

8) Pumpkin Pasta Sauce
Make a creamy sauce with pumpkin puree, sage, onion, garlic and mascarpone.  It’s a grown up take on mac and cheese.

9) Pumpkin Lasagna
Another spin on pumpkin & pasta.  Use pumpkin puree in place of béchamel. Season with sherry vinegar, rosemary and a pinch of brown sugar, then layer with spinach and assemble.  Delicious

10) Pumpkin Black Bean Burgers
Our favorite type of comfort food.  Add ½ cup pumpkin puree to 1 cup of cooked brown rice and 2 cups of black beans, plus your favorite Mexican spices.  Pulse it in a food processor and enjoy as patties topped with fresh salsa.

11) Pumpkin Pie Fudge
Cook it up with pumpkin puree and pumpkin pie spices, plus white chocolate chunks and marshmallow crème.  Just right for fall.

It’s a classic we can’t resist, particularly when studded with white chocolate and spread with spiced brown sugar butter
