Summer’s made for salads. Veggies tossed with tasty croutons, toasted nuts and some delicious beans is our idea of a perfect summer dinner. This week we’re sharing our famous Lemon-Chai Dressing recipe. It has a sunny flavor members have fallen in love with, and we serve it with everything from sauteed broccoli and carrots to polenta croutons and fresh peas. Let us know what you do with yours!
Ingredients
7 oz coconut milk
2 ½ Tbsp lemon juice
¼ cup chopped green onion
1 ½ Tbsp chai spice (we buy ours at the Spice House)
½ tsp black pepper
Putting It All Together
Puree all of the ingredients in a blender, then transfer to a skillet. Bring to a boil, then simmer until it is shimmery and has reduced by half, about 5 to 7 minutes. Toss with warm veggies or serve chilled.
