Memorial Day Made Easy: 8 Tasty Ideas

Thai Peanut KabobsGetting ready for a Memorial Day BBQ and need a little inspiration?  This week we’re sharing 8 of our favorite crowd-pleasing summertime recipes-with-a-twist.  Whether you’re putting together a complete meal or a recipe to share, we know you’ll find something to make your mouth water!

1) Thai Kabobs
You know that delicious peanut sauce that makes Thai Satay so delicious?  Try slathering it on veggie kabobs.  Instant gourmet.  Instant delicious.

2) Mint-Basil Pasta Salad
Mint brings a freshness to traditional pesto that we love.  It’s perfect on a cold pasta salad with any veggies that grab your eye.  See the pesto recipe here.

3) Caprese Panzanella
Is there anything that says summertime like the classic flavors of Capri?  Even better in a hands-free bread salad where the oven does all the work.  See the recipe here.

4) Cauliflower “Couscous”
Cutting back on carbs?  Make your favorite couscous salad with tiny cauliflower bites instead of pasta.  Just pulse cauliflower in a food processor until it’s the consistency of couscous, then use raw or sauté over high heat for a minute or two.  It’s delicious in place of couscous, quinoa, orzo or farro.

5) Cilantro Lime Roasted Vegetables
Roasted vegetables are delicious, but even better with a Mexican flair.   Drizzle grilled veggies with a cilantro-lime-garlic-olive oil mix.  Even better mixed with sour cream or yogurt.  (We particularly love it with a combination of sweet potatoes, corn and bell peppers.)

6) Tahini Grilled Eggplant
Same principle as #5:  a tasty sauce makes grilled vegetables extra tasty.  And for eggplant, our favorite is a Middle Eastern tahini sauce.  Just combine tahini with lemon juice, garlic, a pinch of cumin and a splash of warm water.  Spread over the hot eggplant and get ready to feast.

7) Grilled Fruit Skewers
They sound simple, and they are.  Just skewer pineapple, kiwis, mangoes and strawberries on a stick and cook on a grill.  But for an extra kick, try brushing them with rum and pineapple juice followed by ginger, cinnamon and powdered sugar before grilling.    Wowzers.

8) Speedy Trifle
Want a true no-hassle dessert?  Toast pound cake cubes, mix with some peaches and delicious flavored yogurt and enjoy.  (We added a little razzle dazzle to this basic recipe when we featured it on the Meez menu a few weeks ago by caramelizing the peaches and adding cashews and mint, but a simpler streamlined version is still delicious.)  See more 5-minute dessert ideas here.
