Peanut Butter & Sweet Potato Rice Bowl

pb bowlThis gem is humble and oh-so delicious. It’s all about the creamy Asian peanut butter sauce, which we could eat with a spoon. But since we’re supposed to be grown-ups, we’re restraining ourselves. (Mostly.) Instead, we’re tossing it with roasted sweet potatoes, toasted organic tofu, wilted kale and brown rice. The result is crazy good.

Ingredients

1 Cup Brown Rice
2 Cups Chopped Kale
10 oz Baked Tofu, in Triangles
2 ½ Cups Diced Sweet Potatoes
Peanuts (optional)

Peanut Sauce
1/3 Cup Chunky Peanut Butter
2 tsp Minced Garlic
1 ½ tsp Ground Ginger
2 Tbsp Rice Vinegar
2 Tbsp Tamari
2 Tbsp Brown Sugar
Pinch Cayenne Pepper

Instructions

Preheat your oven to 450.

Get the brown rice cooking first. Bring approximately 3 cups of water to a boil. Rinse the rice under cold water using a strainer. Add the rice to the saucepan and boil, uncovered, over medium heat for 30 minutes. Drain briefly (10 seconds), then return it to the pot. Cover, and let sit 5 minutes.

After the rice has been cooking for about 10 minutes, put the sweet potatoes onto a rimmed baking sheet, preferably lined with parchment paper. Drizzle with olive oil, salt and pepper. Arrange in a single layer and bake until tender, about 20 to 25 minutes. Mix up your peanut sauce. Combine Put the peanut sauce into a mixing bowl and thin with a little water. (We found 2 to 4 Tbsp was just right.)

When you’re about 10 minutes away from eating, get the kale cooking. Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Add the kale and cook until it’s as done as you’d like it. Jen likes it just wilted. Chef Max prefers a softer leaf, so he cooks it an extra minute or two. Add salt and pepper and transfer to a bowl.  Add the tofu to the pan (still over medium high heat) and cook for 3 to 5 minutes on each side, until a little crisp in places. Set aside until you’re ready to assemble the bowls.

When you’re ready to serve, fill each bowl with some rice, kale, sweet potatoes and tofu. Drizzle with the peanut sauce and top with peanuts if you’d like.
