Poblano peppers are one of those veggies most of us walk right by in the grocery store. It’s the star of one of our favorite Meez recipes (this ridiculously delicious Cheesy Poblano Pepper Burrito) and so we’re taking a moment to sing its praises with a list of our favorite reasons to love poblano peppers:

Poblanos have twice the vitamin C as an orange! Plus loads of antioxidants, Vitamin A and other goodies.

They’ll keep in your fridge for well over a week, so you can stock up on your weekly grocery run.

Use them anywhere you’d use a bell pepper. They’re mild enough to work raw, but have enough of a kick to add interest.
6) Budget-Friendly
These peppers are inexpensive, so they can take center stage on a plate without breaking the bank.
7) Made For Roasting
Peppers roast like a dream, and poblanos are particularly easy to work with. Roast them directly over your gas burner until the skin chars, then put them into a bowl covered with plastic wrap. When they are cool enough to handle, rub the skin off and you have a delicious ingredient to add to almost anything.
8) Easy
Taking the skin off is great, but it’s optional. We’ll often just dice and roast poblano pepper pieces, without bothering to remove the skin. The flavor and texture are still delicious.
